End of season presumably being the last meal as a wintering base before First Call arrived (the first ship of the season). The unusual item being the Roast Blue Eyed Shag for main course, a sea-bird that nests and breeds on Signy and surrounding islands.
While living at least partly on the wildlife was a sensible and expedient thing to do for early expeditions and as an occasional treat later on, it was soon stopped as Antarctic ecosystems can be very sensitive to outside influences, but most of all perhaps it is simply unnecessary. These days you have to have a licence to kill an Antarctic mammal or bird and a very good reason to be get that licence in the first place.
